I get asked often why do I dehydrate food? Is it really that important? Well I went to answer and decided I will answer here. In this article I am going to share with you why I dehydrate, and what I do with the food I dehydrate. Also I will share with you reasons why dehydrating is worth your time.

Second, I try to use what I have on hand. Third, I need to keep on our budget. That is a biggie, to be able to stay on budget- I have to change recipes up to fit our budget. All the while still keeping them tasty.

I have a lot of children, homemade alfredo sauce is a great staple to have on hand for a quick lunch. Also, I have a child in college and these make for a nice meal for him to have at his dorm.
When our daughter was born sick, that lead to a compiling list of disabilities for her. There were many things I wasn’t prepared for. For example the stares and comments of strangers as they passed by us in the grocery store. People can be brutal. Our little one is deaf, (I am not sure if this is common amongst deaf children) but she screams. Just randomly screams. She isn’t mad, she just screams and smiles. The looks oh the looks. Another very hard pill to swallow is when other parents/grandparent talks about or compares their child to yours.
Anyone love to camp, but not sit in the kitchen all day cooking? Or how about those busy moms, that have been working, or running from one appointment to another? These meals in a jar are perfect for you!! Also, we live in the South and it is hurricane season, this is a great way to get prepared.
So I planted over 100 squash seeds. I kid you not, I think they all grew! Oh what was I thinking!!!! I had to get creative this year. I dehydrated hundreds of pounds of zucchini and squash, for casseroles and breads. I canned over a hundred jars of squash, and I canned zucchini bread. Oh that was wonderful to have on hand. This zucchini relish was a first for me, and let me tell you, IT WAS A HIT!!!
